Cooking chicken-fried steak...what burner setting? I have high, medium, low...?
Is it best to deep fry or pan fry? It seems I always burn the coating. I have a stainless skillet with copper bottom. My stove has standard burner settings. I try to use the med.-high heat, or even the med., but it just does not work for me. It's probably just the cook. LOL Any answers?
Pan fry definitely, unless you have a contraption made especially for deep frying. Put about an inch and a half of oil in your pan and set it on medium or just a little above. Make sure you let your oil get plenty hot before you put in the steak. To tell when the oil is ready, just drop in a little piece of breading and it should sizzle and brown quickly. Also, do not overcrowd your pan or it will lower the temperature of your oil too much. If this happens, you will have to leave the steaks in the pan too long for them to get cooked all the way through and your breading will be burned by that point. Also, they will absorb to much grease. leave at least a half inch of room between steaks. you will probably have to fry them for about seven minutes on each side. Good luck with your dinner! **Also, don't set your heat TOO low because you will wind up with a greasy mess. I usually don't go but a notch below medium when pan frying.
